I had raw fish with lemon and sprinkles of sea salt, sliced omelettes then, chicken sashimi came to the table (The Last Photo) Yes, raw chicken! It’s supposed to be a delicacy in Japan. I had a small piece and already knew it wasn’t meant to be, chop-sticks were down and I had to call for a tea break. I couldn’t recall the name of restaurant but it was quite near Sannomiya Station in Kobe. Although, it’s not something I’d willingly order again, it was definitely an interesting experience. Never in my life would ‘Raw Chicken’ come to mind for a meal.

How is the chicken prepared? Isn’t there a massive salmonella risk with raw chicken?

Hmm I didn’t watch them prepare it but I think they cook a few millimetres on the outside to kill the bacteria but keep the rest raw.
